Measurements are all approx since I just wing it
- Olive oil
- Curry powder, approx 1 tbsp
- Approx 1/4 to 1/2 of a large white onion, chopped
- 3 cans tuna (drained)
- Brown rice ( make according to directions set aside)
Add chopped onion to pan with olive oil, cook until soft, sprinkle in curry powder (to cook’s choice, typically a tablespoon). Add the 3 cans of tuna, chopping the tuna up as you stir, heat thru and serve over the brown rice. (Or over additions, I usually throw spinach in as well)
Cheap dinner, incorporates the protein, fat and carbs. AND if it is not a carb night you can just do the tuna curry over spinach.
