2 sweet potatoes (washed, clean, and with skins on)
1-1/4 tsp sea salt
2 medium avocados
1 Tbsp fresh squeezed lime juice
1/2 tsp paprika
4 slices of thick cut bacon
3 Tbsp freshly chopped cilantro
Preheat oven to 425. Using your mandoline slice the sweet potatoes into 1/4 inch – 1/2 inch cross sections. Line two baking sheets with tin foil and brush half of the olive oil on the foil. Place sweet potatoes on the baking sheets in a single layer. Brush the remaining olive oil over the sweet potatoes. Sprinkle 1 tsp sea salt on top. Bake for 20-25 minutes or until golden brown underneath.
Meanwhile in a small bowl mash the two avocados, paprika, lime juice, and 1/4 tsp sea salt. Set aside. In a large skillet fry the bacon over medium heat. Place cooked bacon on a paper towel. Once the bacon has cooled off chop into small pieces.
Once the sweet potatoes are done baking, top each with some avocado mixture, chopped bacon, and cilantro.
